  4. Prepare 2 veg stock cubes
  5. Take Optional 1 large handful of spinach
  6. Get 1/4 cup milk
  7. Get Salt and pepper

Creamy Spinach Soup recipe is easy, delicious and loaded with the goodness of spinach. There is only Spinach in here, thickened with cream cheese and a good dose of freshly cracked black pepper. Preheat a large saucepan over low-medium heat. Add the oil and all the veggies, peas and herbs.

Instructions to make Frozen Pea and Spinach Soup:
  1. Chop the onion and sauté in the butter over a medium until translucent, then crumble in the stock cubes and mix.
  2. OPTIONAL Whilst the onion is sautéing, blend the spinach with 400ml of water [using a smoothie machine] to make a spinach water, otherwise use 550ml of water.
  3. Pour the peas and blended spinach water (or 550ml of water) and simmer for 5 minutes or until the peas are cooked.
  4. Blend the soup until smooth, mixing in the milk and seasoning with salt and pepper.
  5. Serve with fresh bread and optionally a ribbon of cream or yoghurt.

Preheat a large saucepan over low-medium heat. Add the oil and all the veggies, peas and herbs. Soup is a very underrated dish. It's a healthy start to a meal as it means you won't fill up on unhealthy things later, and can even be a meal in itself. You can add a little of the stock during this process if the pan is too dry.
