  4. Beat eggs, tomato purée and roasted peppers in a dish. Season with salt and pepper.
  5. Take the quiche pastry out of the oven. Pour in your filling and place back in the oven at 200C for 25 mins.

Quiche makes a delicious supper for midweek or the weekend or for a buffet party. It can be served hot or cold and can be easily frozen for another day.
