The ingredients needed to make Saltfish Fritters:
  1. Take 200 g Saltfish (Cod/Whitefish)
  2. Prepare Half Green Bell Pepper
  3. Get Half Red Bell Pepper
  4. Prepare Handful Parsley
  5. Make ready 1 Scotch Bonnet
  6. Take 2 Garlic Cloves
  7. Prepare 3 Spring Onions
  8. Take 1 Egg
  9. Get 120 g Plain Flour
  10. Prepare 125 ml Coconut Milk (or Water)
  11. Make ready 1 Tsp Paprika
  12. Get 2 Tsp All Purpose
  13. Make ready 1 Tsp Mixed Herbs
  14. Take 1 Tsp Thyme
  15. Get 2 Tsp Baking Powder
Instructions to make Saltfish Fritters:
  1. Either soak the Saltfish overnight in cold water (making sure to change the water several times) or boil in water for 10 minutes, drain the water and repeat boil for further 10 minutes.
  2. Shred the fish in a large bowl using a fork or pulse in a food processor. Add to the Saltfish finely chopped or minced Spring Onions, Garlic, Parsley, Bell Peppers, Scotch Bonnet and Egg.
  3. Mix the following dry ingredients together; Plain flour, Paprika, All Purpose, Mixed Herbs, Thyme and Baking Powder before combining with the wet ingredients. Gradually add the milk whilst mixing to achieve the desired thickness.
  4. Heat oil in a deep pot on High/Medium heat and carefully using a teaspoon, scoop a spoonful of batter into the hot oil. Fry for a minute on each side depending on how small the bites are or until they are golden brown and thoroughly cooked in the middle.
