  1. Make ready 1/2 onion finely chopped
  2. Get 1 clove garlic minced
  3. Take 1 tblsp chilli flakes
  4. Make ready 1/2 cup quinoa
  5. Get 1 cup vegetable broth
  6. Make ready Prawns peeled
  7. Prepare Parsley

How to Make Prawn, Quinoa & Tangerine Salad. Prawns and quinoa are low in calories and high in protein. Cook the quinoa following the package instructions. Peel the tangerine and chop the avocado and beetroot.

  1. On medium heat, fry onion and garlic till soft. Add chilli flakes and and then add quinoa and sauté for a minute.
  2. Add vegetable broth, bring to the boil and then simmer covered for 20-30 minutes or till cooked. Halfway through add the prawns and cover.
  3. Add parsley. Season with Salt and Pepper and serve hot.
