The ingredients needed to make Coconut Prawns:
  1. Take 10 prawns peeled and deveined but with tails on
  2. Get 30 g gluten free plain flour
  3. Prepare 1/2 teaspoon garlic powder
  4. Make ready 1/2 teaspoon salt
  5. Make ready 1 egg beaten
  6. Prepare 25 g desiccated coconut
  7. Take 25 g gluten free breadcrumbs
  8. Get Olive oil for cooking
  9. Get Sweet chilli sauce for dipping

Dip each prawn in: flour mixture first, egg mixture second, coconut third. At this point they can be placed on waxed paper and refrigerated until ready to. Using a small knife cut the prawns down the back, but do not cut through. This will butterfly the prawns so that they lay flat.

Steps to make Coconut Prawns:
  1. In one bowl mix together the flour, garlic powder and salt - In another bowl have the beaten egg - In the final bowl mix together the desiccated coconut and breadcrumbs - Dip each prawn in the flour then the egg and finally the breadcrumbs
  2. Pour oil into a shallow pan until it covers the bottom - Place on a medium heat for a couple of minutes - Add the prawns and cook for 2-3 minutes each side or until golden - Serve with a sweet chilli dipping sauce

Using a small knife cut the prawns down the back, but do not cut through. This will butterfly the prawns so that they lay flat. I think these coconut prawns would be ace with proper big hefty king prawns but we made do with the so-called king prawns from Sainsbury's which were significantly smaller. These crunchy prawns / shrimp…so, I have to tell you, the first batch I made was just coated in coconut. But they just weren't that crunchy!
