  4. In a hot skillet add olive oil, onions cook until translucent, add chopped chillies, garlic and ginger paste, cook for another minute or two, now add salt and pepper, aubergine and mix well, add peanuts and cook until warm, garnish with coriander or parsley and set aside to cool
  5. Serve with crackers or toast with a lovely glass of wine or beer or whatever

Because vegetable sizes will inevitably be variable, add the olive oil. Melitzanosalata: Greek aubergine dip is a wonderful vegan dip full of flavour and taste. I know you will love it. Turn the aubergine dip into a small serving bowl and chill before serving. Place the bowl in the centre of a large plate and surround it with raw vegetables (crudites) neatly trimmed, for dipping.
