Vegetarian oyster sauce is a good substitute for regular oyster sauce (a key ingredient in many Asian recipes). This brand does not contain soy sauce and appears to be gluten-free. However, it does contain hydrolyzed vegetable protein, which may be derived from wheat, so check the label carefully. Choose your mushrooms carefully: Crimini and white button will never get as crispy as oyster or maitakes.
