Egg Fried Rice is basically just rice, egg, soy sauce & onions. You want to avoid freshly cooked rice because it is still moist and steamy, which may yield fried rice with a mushy texture.

Instructions to make Egg fried rice:
  1. Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add white onion and carrots and fry until tender
  2. Lide the onion and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  3. Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

Egg Fried Rice is basically just rice, egg, soy sauce & onions. You want to avoid freshly cooked rice because it is still moist and steamy, which may yield fried rice with a mushy texture. Toss well to combine, then press down evenly into skillet. Crack in eggs, stirring quickly to scramble eggs with vegetables. Eggs are scrambled and added in the rice, which makes it different from other Fried Rice recipes.
