When I say simple, I mean, seriously as simple as it gets! Scramble some eggs in tiny bit of oil or butter. A nonstick deep skillet or Wok is best for this. Remove them from the pan and set aside on a plate or in a bowl.

Instructions to make Egg Fried Rice:
  1. Add oil in a kadai followed by chopped garlic and onion, saute for seconds on high flame.
  2. Add chopped carrot and cook on high flame
  3. Now add coloured bell peppers,green chilli,black pepper,soya sauce,vinegar salt and cook for seconds.
  4. Break eggs add salt and black pepper powder.In the corner of kadai add egg mixture and make a omelette.
  5. Cook well and cut into pieces.
  6. Now mix everything like egg pieces and vegetables.
  7. Add spring onion and saute for a second.Add rice and mix well.
  8. Take out in a serving bowl garnish with egg pieces and chopped spring onion.Serve hot with Manchurian of your choice.

You want to avoid freshly cooked rice because it is still moist and steamy, which may yield fried rice with a mushy texture.
