This Spring Vegetable Couscous Stir Fry is made using simple, Spring vegetables, beans, couscous and some delicious Mexican spices for a bit of a kick. It's topped of with cilantro, fresh hot peppers, and lime juice. The hot peppers are also optional but if you couldn't already tell, the spicier the food the better in my books! The ingredients needed to make Stir fried couscous:
  1. Get 2 cups couscous
  2. Prepare 1 bulb onion
  3. Make ready 1 red bell pepper
  4. Take 1 green bell pepper
  5. Make ready 2 cubes Maggi chicken
  6. Get 2 whole carrots
  7. Take Salt, thyme, curry, cinnamon, bay leaves, white & black pepper
  8. Take Oil and water

Add couscous and stir to combine. In medium saucepan, bring beef broth to a boil. Stir in couscous; cover pan and remove from heat. In large nonstick skillet, heat oil over medium-high heat until hot.

Instructions to make Stir fried couscous:
  1. Measure 2 cups of couscous and pour in a bowl with salt, little oil and 2 cubes Maggi chicken. Pour boiled water over the couscous. Until it is an inch over it.cover and keep aside for 10 minutes.
  2. Cut vegetables in to desired sizes.
  3. Place a non stick pan and add a little oil, spices listed above, leave for 2 minutes then add the vegetables and stir for a few minutes, lastly, add the soaked couscous and stir until uniform in appearance. Add Mr Chef stew seasoning and stir… Adjust your salt to taste.
  4. Serve with protein of your choice.
