This Spring Vegetable Couscous Stir Fry is made using simple, Spring vegetables, beans, couscous and some delicious Mexican spices for a bit of a kick. It's topped of with cilantro, fresh hot peppers, and lime juice. The hot peppers are also optional but if you couldn't already tell, the spicier the food the better in my books! In medium saucepan, bring beef broth to a boil.

  1. Get Couscous
  2. Prepare Veg oil
  3. Take Carrot
  4. Get Coriander

In large nonstick skillet, heat oil over medium-high heat until hot. Pour over the couscous, and give a quick stir so the couscous is spread evenly through the stock. This will help it soak in better. Remove the pan from the heat and stir in the couscous.

Steps to make Stir fry couscous:
  1. In a clean bowl pour couscous and add a tablespoon of veg oil give it a quick stir pour in hot boiling water and cover (the couscous will soak the water) - Hot oil in a pan on medium heat add bay leaf,couscous,onion,ginger and garlic paste and stir,add carrots and keep stirring until the carrot are soft
  2. Allow it to simmer for 2-3 minutes and serve while hot,I served mine with salad and Ram meat pepper soup.

This will help it soak in better. Remove the pan from the heat and stir in the couscous. Step three - make a well at the centre of the cous cous, and pour in the egg. Let the egg start to cook, then when the bottom layer has cooked, stir the egg and cous cous all together. Keep stirring until the egg is completely cooked.
