For many years I've been fascinated by variations on yeast-free yogurt flatbread recipes (sometimes called. Spouse and I had been watching a cooking competition recently where one of the teams was from Lebanon. "But flatbread is bread," you might be thinking. As you can see, our photo of this particular flatbread recipe comes with beautiful heirloom tomatoes and a yogurt sauce on top, but I don't recommend.   1. Prepare 200 g Greek yogurt (low fat is optional)
  2. Prepare 200 g Plain flour
  3. Take 1-2 tsp Bicarbonate of Soda
  4. Get 1/2 tsp Salt
  5. Get Dash ground black pepper
  6. Get * Recommened herbs and spices
  7. Get 1/2 tsp Rosemary (not fresh)
  8. Make ready 1/2 tsp Thyme (not fresh)

Steps to make Yoghurt Flatbread:
  1. Put in the flour, yoghurt, bicarbonate of soda, salt, pepper and herbs in a bowl. Mix with a wooden spoon till roughly blended, then combine with hands till the it has turned into a shaggy dough ball. Then knead for 2-5 mins or until it turns into a nice dough.
  2. Shape the dough into an inch, thick disk and split into 8. Roll each bit into a ball.
  3. Heat pan. Roll out one of the small dough balls into 1/2 cm thick disk.
  4. Pop the disk into the pan and flip when bubbles start popping up and a little bit of steam comes up from underneath. When flipped wait for 30 secs and transfer onto a plate. - Repeat this step till all 7 are done.

Leftover sourdough starter paired with tangy Greek yogurt creates the best homemade flatbreads. Flatbreads are a handy storecupboard staple, but nothing beats soft and fluffy homemade versions. John Torode's yogurt flatbreads are perfect with a meze mix. In a large bowl, mix together yogurt and flour until it forms a smooth dough. Transfer the dough to a floured surface.
