Cut cauliflower into very finely chopped pieces similar to real couscous or rice. When it's combined with so many colorful companions, no one will know this recipe is lower in carbs! Making cauliflower couscous couldn't be easier. You just grind up fresh cauliflower florets in a food processor until they resemble couscous.

I've been serving this for several years as a side dish whenever we want to slim down. Full of spices and charred roasted vegetables, this Moroccan-style ' couscous ' from Karen uses cauliflower for a low-carb version. The cauliflower couscous can be topped with spicy sausages as Karen does here, or with other grilled meats or with halloumi or feta for a veggie version. Sprinkle feta cheese and a pinch more Za'atar, if you like.

Steps to make Cauliflower Couscous:
  1. Blitz cauliflower and dry fry for a few mins with chopped walnuts or cover and microwave. Leave to cool.
  2. Blitz red onion, fresh herbs, lime and olive oil. Finely dice the tomatoes
  3. Mix together all the ingredients and spices and season well.

The cauliflower couscous can be topped with spicy sausages as Karen does here, or with other grilled meats or with halloumi or feta for a veggie version. Sprinkle feta cheese and a pinch more Za'atar, if you like. Drizzle a little tahini, particularly over the cauliflower, if you like. No, it probably wouldn't win in a side-by-side taste test with either couscous or white rice, but it does a fair job of coming close. It's light and fluffy, like couscous.
