The best way to cook a batch of courgetti is to heat a tablespoon oil, such as olive oil or coconut oil, in a frying pan over medium heat and sauté the noodles with a generous pinch of salt and a little pepper.   10. Prepare Soy Sauce to your taste

Add the grated courgettes and peas and stir to coat in the butter. Add the stock and bring to the boil until peas are tender. Add mint to the pan together with the crème fraîche. Season with pepper, and transfer mixture to a bowl.

Instructions to make Pea and Courgetti noodles:
  1. Heat a little oil in a pan. When hot add the courgette noodles and stir fry for 2 minutes. Add the chilli and garlic and stir fir a minute. Add the remaining vegetables.
  2. Add the chilli, chopped mint, soy sauce and a good squeeze of lemon or lime. Serve with a wedge of lemon or lime.

Add mint to the pan together with the crème fraîche. Season with pepper, and transfer mixture to a bowl. Squeeze the courgettes in a clean tea towel and place in a large bowl. Mix in the blanched peas, ground rice, basil, parmesan and pine nuts then add the beaten eggs and season with sea salt and freshly ground black pepper. These spiced pea and coriander fritters are easy to make ahead of time.
