  3. Sieve the sauce, lighten it with some water, then return to heat with the beans and simmer until very thick.
  4. Correct seasoning and, if too acidic, add some sugar.
  5. Remove from heat and let rest a bit before serving i.e. serve warm not hot. Perfect with ugali.
