  6. bake 10-12 minutes or until a light golden brown. cool on a rack.
  7. while your pastry is cooling… put together your filling and topping.

  9. put your pear chunks in a medium bowl and squeeze juice from half a lemon over top and toss gently. set aside.

  11. in a small bowl stir together the flour, oats, sugars, spices and salt. add in your softened butter and cut in with a fork. be careful not to overmix … you want it "crumbly".
  12. once pastry is cool… add your pears and lemon juice. sprinkle on your crumble topping…. and bake for 20 - 30 minutes at same temperature as the crust (375 degrees).
  13. you can serve it as is… or with a scoop of ice cream… or even some whipped cream.
