This buttery homemade mince pie recipe with a festive mincemeat filling is great with a touch of whisky. Cook's tip: if freezing cooked mince pies; cool and chill before freezing in air tight bags. These are hands-down the deepest mince pies we've ever had the pleasure of coming across. So big we resorted to a fork, the pastry is rich, buttery and crumbly and the mincemeat has been soaked in orangey Cointreau, almondy-disaronno and sweet.

To begin with this recipe, we have to prepare a few ingredients. You can cook sig's boozy mince, cranberry and marzipan pie using 8 ingredients and 3 steps. Here is how you can achieve that.

The ingredients needed to make Sig's Boozy Mince, Cranberry and Marzipan Pie:
  1. Take I pack of roll out shortcrust pastry or equivalent homenade
  2. Take 1 tablespoon Butter or flour for brushing or dusting of the tin
  3. Get 1 jar, (400 grams) mince meat, bought or homemade
  4. Get 1/2-1 block (taste preference) baking marzipan
  5. Make ready 4 teaspoons dark rum or brandy
  6. Make ready 2 handful cranberries
  7. Prepare I egg yolk for brushing
  8. Prepare Powdered or icing sugar for dusting

Divide between the tarts and scatter over the flaked almonds. This year's best mince pie has a temptingly sticky jammy filling that peaks through a star-shaped window in the wonderfully crisp, golden pastry. Tart cranberries, zingy lemon peel and sweet glacé cherries combine beautifully with Bramley apple and vine fruit to Cranberry and apple mince pies. The booziest pie I've had so far this year is Waitrose All Butter Pies "with a rich mincemeat filling containing cranberries, glace cherries and brandy".

Steps to make Sig's Boozy Mince, Cranberry and Marzipan Pie:
  1. Preheat oven to 180 °. Soak cranberries in 2 teaspoons of alcohol. Brush pie dish with deep rim of choice with butter or dust with flour. Roll out the pastry if homemade or line as it comes with shop bought one as this is the right thickness. Make sure you have enough pastry on edge to fold over pie, or as here have a small fold but enough pastry to cut trees or stars.
  2. Next shave enough marzipan with grater of block to cover bottom of pie. Add mincemeat, shave another layer of marzipan, then add cranberries, drizzle with the rest of alcohol, add another layer of marzipan. Fold over the pie edges and decorate with seasonal shapes. Brush with the egg yolk and bake until golden brown about 20 to 25 minutes, but do check as different ovens cook with very different results sometimes.
  3. Cool almost completely before putting onto wire rack to finish cooling. You can slightly reheat this or eat it cold with brandy butter or a festive custard or cream. Enjoy.

I'm not sure "go to work on a mince pie" has the same ring to it as eggs, but I definitely don't think the government will be recommending boozy mince. Christmas and cranberries go together like Santa and presents. A traditional Christmas without mince pies is simply unimaginable.
